Vegetables

So my favorite veges are not actually considered vegetables any longer. I personally love all vegetables (except the evil yellow squash), and I think if you cook them right, you will too.  Here are some recipes that even picky people can enjoy.

Simple and AMAZING Brussel Sprouts and Cabbage

 

When someone tells me they don't like Brussle sprouts, I always make them try mine. They are simple, and delicious.  All you need is butter, salt and pepper,  brussel sprouts and red cabbage! It looks festive and is super good. 

 

First, trim the bottoms off your brussle sprouts and then but them in half or quarters.  When they are all cut, boil (blanche) them for about 30 seconds until they turn bright green

Then put them in a frying pan with some butter, salt, and pepper and cook them for about 3-5 minutes. 

Add sliced red cabbage and cook for about another 1-2 minutes.

 

Parsnips and Carrots

 

3 parsnips

3 carrots

fresh thyme

2 tbsp olive oil

2 tbsp honey

 

cut the parsnips and carrots similar size, put on cookie sheet. Drizzle oil and honey on top. Add a few sprigs of thyme and bake.  I use 350 degrees for about 20 min (stab one with a fork to see if it is cooked).

A green salad with red wine vinaigrette

1/3 c. red wine vinaigrette
Add to a bowl of leafy greens, with croutons, add apples, figs, or any other fruit.
2/3 cup oil (I prefer hazelnut or walnut oil)
1 tbs dijon mustard
1 tbs honey
salt and pepper to taste

Mix all these ingredients together in a bowl and serve it out for a fantastic homemade salad dressing. Try topping with walnuts warmed in sugar and a bit of salt for an added taste. Top with some cheese.
